A 100% natural Pinot Noir, from a 5-ha parcel planted on a clay-limestone soil. The vines are 30 years old and the yields around 30-35 hl/ha. As for the vinification: whole bunches are macerated 10 days, with 20-30% of the grapes botrytised (concentrated by ‘noble rot’). No sulphur is added during either vinification or maturation. The wine is matured 2 years in old barrels on its fine lees, and is bottled without filtration. The estate is certified organic and biodynamic by DEMETER. Raudaunas means “red” in Lithuanian, the native language of Sébastien’s wife.
Sébastien Riffault, look no further, it’s him, the one and only 100% natural winemaker in Sancerre. His estate, Domaine Etienne et Sébastien Riffault, is located in Sury-en-Vaux. There Sébastien works his soils with horses, uses zero chemicals in the vines, and farms biodynamically. If is approach recalls that of Alexandre Bain, it’s perhaps not surprising to know the two are not only neighbours but close friends. But Sébastien goes farther still with his wines, and their identity is more natural. In the past, he has often been accused of making wines that were too oxidative, or even deviant... But as the elders of Sancerre know very well, in the past, Sancerres did indeed offer such wide aromatic palettes. If only there were more to go around. Sébastien experiments a lot, especially with long barrel maturation. A sincere and sensible winemaker.
