LAVRENCIC Primoz
100% Pinot Noir, from vines planted on marl and sandstone soils, in the Vipava Valley in the west of Slovenia. Farmed organically and in the process of conversion to biodynamics, the vines are between 5 and 19 years old, and include the grape varieties Zadomajc (0.6 ha), Ravno brdo (0.5 ha), and Ostri vrh (0.3 ha). Situated between 220 and 260 metres above sea level, and facing northeast, the vines are pruned according to the single guyot system. The grapes are harvested by hand in the first week of September, followed by 20 days of maceration in stainless steel vats with a little punching of the cap, and 11 months of maturation in 10-hectolitre wooden vats. Bottled in August 2019 without fining or filtration, and just a microdose of sulphur. Primoz Lavrencic is the man behind Domaine Burja, an estate located in the west of Slovenia, in the Vipava valley. Exceptionally attentive to the composition of his soils, this young winegrower has a passion for understanding the particularities of his different vine parcels. As Primoz puts it: "Domaine Burja represents the embrace of a modern understanding of wine by a traditional agricultural estate in the Vipava Valley. But shouldn’t those things go hand in hand? Don’t all estates that value their traditions try to identify their roots, the origins of aromas and flavours, while at the same time seeking an intimate understanding of the soil and the climate of their vineyards?… In the cellar I keep control over temperature and oxidation, but I try to only encourage the rest. I try to work in synergy with the vine, the wine and nature, even encouraging spontaneous fermentations. For this reason I allow contact between the skins of the berries and the must, even in the case of white grape varieties. The diversity of my native yeast strains, in my opinion, contributes to the complexity of the wines and guarantees a more original expression of the different vineyards.… My mission is to carry on and cultivate the tradition of viticulture and oenology of the Vipava Valley. With the help of my colleagues, I hope to build a strong reputation for this region’s wines, while savouring every moment in the process!" It is certainly a beautiful project, and a philosophy that today is yielding elegant, exceptionally well-crafted wines.
