100% Pinot Noir from vines planted in 1964 on a single, enclosed 1-hectare vineyard parcel in Mareuil-sur-Aÿ. Vinification: direct pressing, 100% vinified in French oak barrels, 16 years of ageing in stacks in the cellar. Disgorged and with zero dosage. Named in honour of the patron saint of the church of Mareuil-sur-Aÿ, this cuvée was created in 1995 after years of meticulous maintenance of the vines. The bottle is numbered and delivered in a wooden box.
François Domi was the cellar master of the Maison Billecart-Salmon for nearly 33 years before passing the torch in 2018 to Florent Nys, who was first taken under Domi’s wing in 2005. Of course, the renown of Maison Billecart-Salmon resides on more than just the shoulders of its cellar master... Indeed, this historic champagne house, founded in 1818 through the marriage of Nicolas François Billecart and Elisabeth Salmon in Mareuil-sur-Aÿ, the family home, has never left the prestigious circle of Champagne’s leading Houses. This family-owned estate, which has been independent for more than 200 years, continues to innovate and improve its techniques both in the vineyard and in the cellar, whether by becoming increasingly precise in its plot identification or through longer fermentations at low temperatures. Today, thanks to meticulous and rigorous work, patient savoir-faire, and exceptional instinct, Billecart-Salmon produces cuvées that are distributed all over the world and yet are still highly sought-after, thanks to their elegant style, great finesse and unparalleled freshness – the house’s true calling card.
