Blend: 60% Pinot Noir from the Premier and Grand Crus of the Montagne de Reims and the Grande Vallée de la Marne, and 40% Chardonnay from the Côte des Blancs. Partial malolactic fermentation, 20% vinified in oak barrels, 10 years of ageing on lees and in the cellar. Moderate dosage: 4 grams per litre. This is a prestigious cuvée created in 1964 as a tribute to the founder of the House.
François Domi was the cellar master of the Maison Billecart-Salmon for nearly 33 years before passing the torch in 2018 to Florent Nys, who was first taken under Domi’s wing in 2005. Of course, the renown of Maison Billecart-Salmon resides on more than just the shoulders of its cellar master... Indeed, this historic champagne house, founded in 1818 through the marriage of Nicolas François Billecart and Elisabeth Salmon in Mareuil-sur-Aÿ, the family home, has never left the prestigious circle of Champagne’s leading Houses. This family-owned estate, which has been independent for more than 200 years, continues to innovate and improve its techniques both in the vineyard and in the cellar, whether by becoming increasingly precise in its plot identification or through longer fermentations at low temperatures.
