Blend: 50% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne, and 50% Chardonnay from the Côte des Blancs. Less than 10% of the Pinot Noir is vinified as a red wine. The grapes for the red wine come from the “Valofroy” vineyard of old vines, located on the slopes of Mareuil-sur-Aÿ which benefit from a south facing exposure. The rest of the grapes are pressed directly. Vinification: partial malolactic fermentation, moderate dosage: only 6 grams per litre, 10 years of aging on lees. Created in 1988 as a tribute to the House’s co-founder Elisabeth Salmon, this cuvée distinguishes itself through its sparkle and refined purity. This sought-after cuvée offers the subtle signature of our the Pinot Noir and Chardonnay terroirs from Billecart.
François Domi was the cellar master of the Maison Billecart-Salmon for nearly 33 years before passing the torch in 2018 to Florent Nys, who was first taken under Domi’s wing in 2005. Of course, the renown of Maison Billecart-Salmon resides on more than just the shoulders of its cellar master... Indeed, this historic champagne house, founded in 1818 through the marriage of Nicolas François Billecart and Elisabeth Salmon in Mareuil-sur-Aÿ, the family home, has never left the prestigious circle of Champagne’s leading Houses. This family-owned estate, which has been independent for more than 200 years, continues to innovate and improve its techniques both in the vineyard and in the cellar, whether by becoming increasingly precise in its plot identification or through longer fermentations at low temperatures.
